This is the next phase for me. Now that I have the weight down I have to maintain.  I have Dr. Opare's books

Same here. I also reached my goal weight so now maintaining means finding creative ways to stay on it.

The keys are 1. if it's white don't bite. And 2. fat makes you fat.

You super over bake the squash and then season like regular spaghetti after using a fork to get it out of the rind. Super important note: It is not soft like flour spaghetti. It's cruchy almost like a sprout. There are ways to minimize that by boiling after baking or simmering in sauce after baking. Since I try not to over cook my food like that, I usually don't do it unless I'm cooking for others who prefer it.

And that's your Best Vegan Chef food tip of the day. LOL just kidding.
