Coconut Rice With Peas And Carrots-gctid240330

It has been very exciting to me to explore the recipes and ingredients that are common here in Northern Tanzania. Coconut rice is a Tanzanian favorite. This recipe uses coconut cream and turmeric along with green peas and carrots. This dish uses only a few ingredients and takes no more than 45 minutes from start to EAT! Just put the rice and veggies and spices in a pot, sauté a bit then add the coconut cream and water. Simmer until done. Simple but satisfying flavors I'm loving. The left overs taste great too. I even used leftovers to make an amazing soup.

Hey sis, I just finished eating this dish and let me tell you that it was deeeeeeeeelicious! I added some chickpeas, raisins, Jamaican curry and Garam Masala seasonings. I also used Basmati rice.  I let a friend, who is not vegan taste it, and he loved it!  My daughter loves it too. Thanks for sharing the recipe!

Yes, let me know how you like it. I have to say that this is one of my favorite vegan dishes to date! My second one is vegan pepper steak that I make with grilled portabello mushrooms with quinoa and gravy. Here's the recipe if you want to try it:

Vegan Pepper Steak Gravy
Ingredients:

2 tbsps. coconut butter

  ·         2 tbsps. Oil
  ·         1 cup of spelt flour
  ·         6 cups water

  ·         2 tbsps. miso paste

  ·         4 tbsps. tamari sauce

  ·         1tsp. ginger
4-6 packs of sliced portabello mushrooms (or 8 whole portabello)
2 green bell peppers
smoked sea salt
onion powder


Directions:

Put the oil and butter in the pan. Add the flour and stir until a thick paste forms. Add the water and stir. If too thick add more water until it makes the desired consistency. Add seasonings to taste. Add miso paste, tamari sauce and stir.

For the mushrooms. Slice them into strips if not already sliced. Spray them with some oil. Season them with smoked sea salt (gives them a nice meaty flavor) and onion powder. After that, spray some oil on a stove grill or pan, and add the sliced portabello mushrooms to it.  Grill it for about 3 minutes each side. Saute some green peppers and onions. Once everything is done, add the mushrooms, onions and peppers to the gravy, and pour on top of some cooked quinoa. Deeeeeeeeelicious!

Awww, that sucks! If I could send you some I would : ) I'm sure any other type of mushrooms will work for the recipe.
